Midnight Muffinomelettes

Ever have one of those evenings where the night seems forever young? Somehow these are the perfect hours for baking…

Thus, the witching hour of baking brings you…..Muffinomelettes!

So go ahead and make yourself a hot caffeinated drink, turn on the kitchen lights, and release the contents of your fridge across the countertop. You’re committed now 🙂 These hot patties of delight are simmered in October air and the plights of witches past and present.

The making:

Must-Haves:

  • 1 large potato
  • 6 eggs
  • cheese

Recommended:

  • veggies (onion, bell peppers, mushrooms, broccoli, etc.)
  • bits of meat (sausages, pepperoni, etc.)
  • fridge bits on the verge of expiration

1.) Spray muffin tin with veggie oil. Sprinkle in grated potato (no need to peel potato first unless you’re picky) Bake for 3-5 mins at 375 C.

2.) Chop veggies/meats into little bits. Whisk together with 6 eggs (or as many as there are compartments in your muffin tin).

3.) Remove tin with oven, split egg-veggie-meat mixture between the 6 compartments. Sprinkle with grated cheese & ground pepper.

4.) Bake at 375 C for about 10 mins- until the muffinomelette tops aren’t super squishy anymore.

So there you go- when the midnight calls, muffins answer.
